Ingredients
- 2 tablespoons sesame oil
- 1 red onion, sliced
- 1 green chilli, chopped
- 1 spring onion, roughly chopped
- 1 green pepper, chopped
- 1 cup, cubed chicken, for vegetarian version use cubed paneer
- 1 tablespoon ginger, grated
- 1 tablespoon Smelly Garlic pickle
- 1 tablespoon peanut butter
- 1/4 cup soy sauce
- 2 cups pre-prepared brown rice
- 1 tbsp Pecky Peanut Sprinkle
Directions
- In a wok, on medium heat, add the sesame oil.
- Add the onion, green chilli and green pepper and stir fry for 5 minutes.
- Now add the chicken, spring onion, and soy sauce.
- Stir fry for 10 minutes and then add the rice and a tablespoon of Smelly Garlic and a tablespoon of peanut butter.
- Mix well and let this cook for a further 3 minutes.
- Add more soy sauce if needed.
- Sprinkle the crushed peanuts or Pecky Peanut sprinkle on top as a garnish.
Recipe Note
Add some chopped spring onions and serve piping hot.
