We found Mita on Twitter and fell in love with the way she created and photographed her recipes. We sent her some samples and much to our happiness, we got her hooked on to our Messy Mango pickle fairly quickly ūüôā
Mita contributed this recipe for our Cheeky Little Cook Off. It is simple, quick, easy but promises bagful of flavour. Eat it for a snack, quick lunch or even those late night hunger pangs, a Cheeky sandwich at it’s best !!

Ingredients for cheese sandwich
Delicious Tamarind cheese sandwich
Cheese sandwich with Tickly Tamarind
Grilled cheese sandwich

Ingredients –
– 2 thick slices of sourdough bread
– 1 tbsp of Tickly Tamarind Chutney
– 50g leftover dry potato curry, slightly crushed, or as much as you like
– 35g cheddar, grated
– 25g mozzarella, grated
РA quarter of a red onion, finely sliced
– A little chopped fresh coriander

Method –
Step 1- Drizzle a little vegetable oil in a frying pan, grease the pan and put on the hob with a medium heat. While the pan is heating up, make the sandwich. Put the crushed potato curry on the first slice, cover with the red onion, fresh coriander and drizzle over the Tickly Tamarind Chutney.
Step 2 –¬†Put on both cheeses on top of the other ingredients¬†and¬†top with the other slice of bread. Place the¬†sandwich¬†in the frying pan and press down with a spatula so the bread gets a golden crisp finish.

 

 

Step 3 –¬†Cook for 3 ‚Äď 4 minutes until the underside is golden and flip over, pressing down again.
Step 4 –¬†Serve immediately and feel cheeky at first bite..

 

 

 

What we love about this recipe is that it’s an easy way of taking leftovers and creating a completely new and delicious meal out of them. Our kinda Cheeky !!
