This is a quick and easy recipe for chicken stir-fry with peanut butter and Smelly Garlic pickle. Using fresh vegetables likes peppers, chillies and ginger, this is a healthy, aromatic and delicious dinner recipe.

Ingredients –
– 2 tablespoons sesame oil
– 1 red onion, sliced
– 1 green chilli, chopped
– 1 spring onion, roughly chopped
– 1 green pepper, chopped
– 1 cup, cubed chicken, for vegetarian version use cubed paneer
– 1 tablespoon ginger, grated
– 1 tablespoon Smelly Garlic pickle
– 1 tablespoon peanut butter
– 1/4 cup soy sauce
– 2 cups pre-prepared brown rice
– 1 tablespoon of crushed peanuts or Pecky Peanut Sprinkle

Method –
Step 1 – In a wok, on medium heat, add 2 tablespoons sesame oil.
Step 2 – Add the onion, green chilli and green pepper and stir fry for 5 minutes.
Step 3 – Now add the chicken, spring onion, and soy sauce.
Step 4 – Stir fry for 10 minutes and then add the rice and a tablespoon of Smelly Garlic and a tablespoon of peanut butter.
Step 5 – Mix well and let this cook for a further 3 minutes.
Step 6 – Add more soy sauce if needed.
Step 7 – Sprinkle the crushed peanuts or Pecky Peanut sprinkle on top as a garnish.
Step 8 – Serve when hot.
