An easy, spicy vegetarian stir-fry recipe with loads of Cheeky character. This recipe makes for a great lunch or dinner with family and friends and also when you just crave all those gorgeous vegetables. What we love about a good stir-fry is that you can make it your own by raiding your fridge and adding whatever vegetables you like.
- 1 tbsp toasted sesame seed oil (or olive oil)
- 1 Red Onion sliced
- 1 Red pepper sliced
- 4-5 Baby corns sliced thinly
- 10-12 Mangetouts, halved
- 1 inch ginger cut in thin long strips
- Handful of coriander leaves finely chopped
- Half a lime
- 1 tsbp dark soy sauce
- Salt to taste (about ¼ tsp)
- 3 tbsp Silly Sesame Sprinkle
- Boiled egg-noodles or brown rice (for gluten-free option)
The trick to making a good stir-fry is a good quality wok, that is not too thick and heats up well.
Here’s our easy, spicy vegetarian stir-fry recipe –
Step 1 – Heat a large wok and add the oil.
Step 2 – Once the oil is hot, add the onions and ginger while stirring constantly.
Step 3 – After a minute, add the rest of the vegetables. On high heat, stir the vegetables regularly. Sprinkle the salt over the vegetables and cook for about 5-7 minutes till the vegetables seem soft.
Step 4 – In a separate small bowl, mix the soy sauce and lime juice.
Step 5 – Pour the dressing in the stir-fry and cook for another minute while stirring regularly.
Step 6 – Add the noodles or brown rice and stir the wok for another 2 minutes, till the noodles (or rice) are mixed well with the vegetables.
Step 7 – Garnish with coriander leaves and Silly Sesame sprinkle
