This is a simple and easy Vegan, Gluten-Free, Savoury pancakes recipe that makes a quick snack or lunch. This recipe using gram flour or chickpea flour that is a must have cupboard staple for any gluten-free enthusiast.
– 1/4 Red pepper, finely chopped
– Half a carrot, finely chopped
– Handful of peas
– 45 gms of porridge oats (gluten free)
– Two tablespoons of gram flour (this can be bought in any Sainsbury’s world food aisle)
– 1/3 cup water, add more later if necessary
– Salt to taste
– Slight olive oil for greasing the pan
– 1 tsp of cumin seeds
– 1 tsp of baking powder
– 2 tsp Nutter Coconut Sprinkle
To make savoury pancakes at home, follow our simple steps below-
Step 1 – In a blender add all your roughly chopped veggies, oats, gram flour and cumin seeds plus the water and blend till as smooth as possible.
Step 2 – Add salt and baking powder and check consistency, you want it to be thicker than normal crepe mix but slightly thinner than cake batter
Step 3 – Lightly grease a non stick pan and allow the pan to heat till slightly smokey.
Step 4 – Pour half a cup of batter into the hot pan and cover for a few mins reduce heat to medium.
Step 5 – Once your pancake looks “bubbly” and slightly set, it’s ready to flip with a spatula.
Step 6 – Cover again and cook until firm. Around 2 minutes. And ta-da your savoury pancakes are ready.
Step 7 – Repeat for each pancake.
Step 8 – Stack and top with your favourite topping, I used Sriracha hot sauce and a generous sprinkle of Nutter Coconut
These pancakes are vegan, gluten free can be made oil free if you have a good quality non-stick pan.
The Nutter Coconut and cumin beautiful balance the earthy taste from the veggies and gram flour, they are soft and light and oh so tasty.
